Starbucks is introducing protein-boosted lattes and cold foam drinks across the US and Canada this month, but its reliance on whey protein highlights a tension between menu innovation and sustainability commitments.
Following a successful five-store trial over the summer, the coffee giant will roll out its Protein Cold Foam and protein-infused beverages on September 29. Chief Brand Officer Tressie Lieberman said the launch reflects Starbucks’ effort to offer “innovative, relevant, and hype-worthy products” that appeal to modern consumers.
The Protein Cold Foam can top any cold drink, delivering 15 grams of protein per 16-ounce Grande, with both permanent and seasonal flavor options. Starbucks is also adding a permanent line of iced drinks with the foam, providing 19–26 grams of protein per serving. Its protein-boosted milk—a blend of 2% milk and unflavored whey protein powder—offers 27–36 grams of protein per Grande.
“Our new protein beverages tap into the growing consumer demand for protein in an innovative, premium, and delicious way that only Starbucks can deliver,” Lieberman said.
However, critics note that Starbucks’ choice of whey protein directly contradicts its climate objectives. Unlike plant-based alternatives, whey relies on dairy, an industry responsible for 4% of global greenhouse gas emissions. While whey is technically a cheese byproduct, producing 1 kg of whey protein in the US generates approximately 20.84 kg of CO₂e—a 92% higher impact than comparable pea protein options.
Starbucks has long promoted its environmental initiatives, pledging to cut greenhouse gas emissions, water usage, and landfill waste by 50% by 2030. Yet its full-scope emissions rose nearly 3% between 2019 and 2024, with dairy-related emissions remaining at 13% of its total footprint. Starbucks has invested millions to reduce its dairy impact, including methane-reducing technologies, renewable energy, and sustainable farming programs.
Industry analysts estimate that if 70% of Starbucks’ cold foam buyers choose the protein version, the chain will use roughly 10,000 kg of whey daily in the US alone—equivalent to 76,000 tonnes of CO₂e annually. By contrast, switching to plant-based or precision-fermented proteins could cut emissions by 90% or more. Companies like Perfect Day, Verley, and Vivici produce animal-free whey alternatives that drastically reduce greenhouse gas emissions, water use, and land consumption.
While Starbucks’ new menu caters to Americans’ growing appetite for protein, the decision underscores a significant conflict between consumer trends and environmental responsibility, putting its sustainability promises at risk.
