A new study from the University of California, Davis, suggests that just a small daily serving of sauerkraut could significantly improve gut health and reduce inflammation.
Fermented cabbage—commonly known as sauerkraut—has long been a traditional staple, but researchers now say its potential health benefits go far beyond its tangy flavor. According to findings published in the journal Food Microbiology, the fermentation process converts ordinary cabbage into a powerhouse of gut-supportive compounds.
“A little bit of sauerkraut could go a long way,” said lead author Maria Marco, professor of food science and technology at UC Davis. “We should be thinking about including fermented foods in our regular diets and not just as a side on our hot dogs.”
The research shows that fermentation triggers the production of bioactive compounds capable of supporting the gut lining, enhancing the immune system, and reducing bodily inflammation. Raw cabbage or brine alone did not yield the same benefits, underscoring the unique role of fermentation in unlocking these properties.
When scientists examined individual ingredients in sauerkraut to determine whether a single element was responsible for the gut-boosting effects, they found that no single component acted alone.
“It’s the full combination of nutrients created during fermentation working together that makes the real difference for your gut,” the study noted.
Another important takeaway: you don’t have to ferment cabbage yourself to reap the rewards. Store-bought sauerkraut—such as the raw, unpasteurized varieties sold by Cleveland Kitchen—offered the same gut-supportive benefits as lab-prepared versions.
Cleveland Kitchen emphasized that its kraut retains live probiotics and fermentation enzymes, along with vitamin C, vitamin K, iron, and antioxidants, all of which contribute to healthy digestion and a strong immune response.
The company recommends incorporating just one tablespoon—or two forkfuls—of kraut into daily meals. It can be enjoyed with eggs, sandwiches, salads, tacos, soups, and other dishes.
Though the current findings are based on laboratory models, researchers noted that clinical human trials are forthcoming.
