When Matt Damon recently attributed his weight loss to giving up gluten, it reignited a long-running debate over whether cutting out the protein truly delivers health or weight-loss benefits. While the The Odyssey star’s comments have captured public attention, experts say the science behind weight loss is far more complex than eliminating a single dietary component.
Gluten is a naturally occurring protein found in grains such as wheat, barley and rye, making it a staple in everyday foods like bread, pasta and cereal. For most people, consuming gluten poses no health risk. However, for individuals with coeliac disease—an autoimmune condition affecting around 1% of the population—avoiding gluten is essential, as it triggers an immune response that damages the lining of the small intestine and impairs nutrient absorption.
Another group includes those with non-coeliac gluten sensitivity, often referred to as gluten intolerance. These individuals may experience digestive symptoms such as bloating and reflux, as well as non-digestive issues including headaches and skin rashes. Despite rising numbers of people reporting such symptoms, the condition remains controversial in medical circles, and the only widely recommended management strategy is a gluten-free diet.
For the vast majority of people who do not have coeliac disease or gluten sensitivity, however, avoiding gluten may be unnecessary—and potentially counterproductive. Foods rich in gluten, including bread, pasta and cereals, are also key sources of fibre and B vitamins. Removing them from the diet can inadvertently lead to nutrient deficiencies, even as the global gluten-free market continues to expand, with projections suggesting it will reach US$13.7 billion (£10.2 billion) by 2030.
Damon did not disclose any medical condition when discussing his weight loss, making it more likely that his results stemmed from broader dietary changes rather than gluten avoidance itself. A study published in Nutrients found no significant differences in body fat or body weight between healthy adults following gluten-free and gluten-rich diets.
Mechanics, Not Magic
The weight loss many people report on gluten-free diets often comes down to basic dietary mechanics rather than any unique metabolic effect of gluten removal. Because gluten is found in many energy-dense carbohydrate foods, eliminating it usually means cutting out items like pizza, fast food and pasta. This reduction in carbohydrate intake leads to a drop in glycogen—the body’s stored form of carbohydrates—which is bound to water. As glycogen levels fall, water weight is lost, creating the illusion of rapid fat loss.
This process explains why people often see dramatic changes in the first weeks of a new diet or exercise program. Beyond carbohydrate restriction, gluten-free diets also tend to push people toward naturally gluten-free whole foods, which can result in lower overall calorie intake.
A small preliminary study published in Frontiers of Sports and Active Living found that participants who followed a gluten-free diet for six weeks lost more weight than those on a control diet. However, researchers concluded that the changes were most likely due to a calorie deficit and fluid loss, not a metabolic advantage from removing gluten.
Another factor involves fermentable sugars known as fructans, found in wheat-based carbohydrates. These sugars are broken down by bacteria in the large intestine, producing gas that can cause bloating and abdominal discomfort. When such foods are removed, bloating subsides and the stomach may appear flatter—an aesthetic change that can be mistaken for fat loss.
Potential Health Risks
Adopting a gluten-free diet without medical necessity may also carry health risks. A large study published in the BMJ found that higher gluten intake was associated with a reduced risk of heart disease. Other research has linked low gluten consumption with an increased risk of type 2 diabetes.
One possible explanation lies in the nutritional profile of many gluten-free products. Removing gluten alters a food’s texture and palatability, prompting manufacturers to add other ingredients to compensate. Studies have shown that gluten-free products often contain less protein, more saturated fat, lower fibre and higher sugar than their conventional counterparts—factors that can contribute to poorer long-term health.
While going gluten-free may appear to support weight loss, experts say the real drivers are typically broader changes in diet structure, calorie intake and eating habits. In most cases, it is these subtle shifts—not the absence of gluten itself—that deliver the results.
